Weekly Menu Plan: 4/4-4/8

This week I’m finally getting my act together! I have been scrambling every night for the past few weeks to think of something for dinner each night (hence the lack of posts on the topic). This week, we have it all planned out.

Sunday: Homemade Pizza Night! I used the garlic dough from TJ’s and it was delicious. Half of the pizza was topped (for the carnivorous hubby) with pepperoni, mozzarella, and mushrooms. The other half was soy sausage, kale (surprisingly good), sun-dried tomatoes, mushrooms, and soy cheese.

Monday: Black bean burgers and sweet potato fries. I’m going to try this recipe for the burgers and sub ground flax seed and water for the egg.

Tuesday:Taco Tuesday! Fish tacos using TJ’s breaded halibut for the guys and veggie tacos with the leftover black bean burger as filling for me. We have pineapple salsa (TJ’s) and guac this week for a topping!

Wednesday: Whole wheat penne pasta with jazzed up TJ’s sauce and TJ’s turkey meatballs or soy sausage (from Sunday) with a big salad. (EASY!)

Thursday: Tofu stir fry with white rice. Normally, we’d do brown rice but I have a bunch of white rice in the pantry to use up. I plan to make the tofu ahead of time using the yummy Baked Orange Ginger Tofu recipe from a few weeks ago.

There are two themes this week: 1) Keep in simple! No fancy recipes. And, 2) Keep it the same! I’ve been killing myself making separate meals for the boys (with meat) and me. This week, I am finally getting smart and making things that have swappable proteins or that may appeal to the entire family. Everyone in our house could eat less meat.



  1. How did the black bean rice burgers turn out? That’s a recipe that I’d be interested in, because we always have left over beans in the fridge or freezer.

  2. I think your TJ’s has a lot bigger selection than mine. Does Noah eat tofu?
